The Distillery
By world standards we are a tiny operation... which is the way we like it. We produce premium quality single malt whisky using time honoured techniques and traditional copper pot stills. Each batch is produced and bottled by hand. Our focus is on quality - quantity is irrelevant.
We strive to source all ingredients locally and are sustainably powered by the Albany wind farm.
Our Stills

We have two stills in operation, an 1,800 litre Wash Still and a 580 litre Spirit Still. Our stills are traditional whisky copper pot stills and were custom made in Hobart, Tasmania, by Australian Still makers Knapp Lewer. We selected the parameters for these stills to achieve a particular spirit profile. This decision was made after lengthy research on stills used by the distilleries producing our favourite Scottish Single Malts.
How do we make it?

Distilling is a hands-on affair at Limeburners and the mashing and distillation process occurs in full view of visitors. The process starts with milling the malted barley in the mill and combining this grist with hot water in the Mash Tun before pitching the yeast and transferring the wort to one of our fermenters.
The highly talented and creative individuals at the helm of the distillation have contact with the spirit at each stage of the process to perfect each barrel. This is a skill that remains with the distiller and can never be matched by a computer. Our distillers' talents have been finely honed over years of experience and are a major factor in the quality of our products.
